Chicken Satays recipe in Cary

This recipe has been a favorite in the Ballam household for a few years. From the cookbook,Food to Live By, this recipe provides something new and exciting to do with chicken. And any recipe with peanut butter in it has to be good, right?


Health Benefits:

Turmeric-the spice that adds the yellow color to curry, has been ranked as one of the world’s healthiest foods. Turmeric is a powerful anti-inflammatory and has shown to have cancer-fighting properties. It can also improve liver function, lower cholesterol, and protect against Alzheimer’s disease.

Coriander- has historically been referred to as an “anti-diabetic” spice because of its ability to control blood sugar. It also assists with lowering cholesterol and reducing inflammation.

Cumin-terrific source of vitamins and minerals, high antioxidant content, improves immune system, aids digestion.


Chicken Satays

  • 2 Tbsp curry powder
  • 1 Tbsp coriander
  • 1 tsp cumin
  • 1 Tbsp sugar
  • 1/2 tsp salt
  • 1 lb boneless skinless chicken breast or thighs, cut into 3/4
  • inch wide strips
  • 1 1/2 cups coconut milk (from a can)
  • 1 1/2 Tbsp rice vinegar
  • 3/4 cup peanut oil or coconut oil

Peanut sauce

  • 1 cup coconut milk
  • 3 Tbsp unsweetened peanut butter
  • 1 Tbsp curry powder

Mix the curry, coriander, cumin, sugar, and salt in a bowl. Set aside. Thread 2 or 3 pieces of chicken on a skewer. Dip each skewer into the spice mixture, coating evenly. Let the satays rest at room temperature to absorb the spices for 15 minutes. In the meantime, whisk together the coconut milk, rice vinegar, and oil in a small bowl. Pour this mixture over the chicken and let them marinate. The original recipe says to marinate them for at least 2 hours, but we never plan that far in advance, so we’ve only done it for a short time, and they’ve still turned out great. Preheat your grill to medium high and grill the satays, turning them over once, until the chicken is cooked through. Serve skewers with peanut sauce.
